Equipment

  • skillet
  • spatula
  • small bowl
  • Fork
  • knife
  • cutting board

Ingredients

Ingredients

  • 4 slices sourdough, ciabatta, or thick sandwich bread
  • 1.5 cups cooked chicken sliced or shredded
  • 1 ripe avocado
  • 4 slices provolone, Monterey Jack, or cheddar cheese
  • 1 small tomato thinly sliced, optional
  • 2 tbsp mayonnaise
  • 0.5 tsp garlic powder
  • 1 tbsp lemon or lime juice divided
  • 1 tbsp butter or mayonnaise for the outside of the bread
  • salt and black pepper to taste
  • crispy bacon optional

Instructions

  • Slice or shred the cooked chicken into thin, even pieces.
  • Mash the avocado in a small bowl with half the lemon or lime juice, salt, and black pepper.
  • Mix mayonnaise, garlic powder, and the remaining lemon or lime juice in another small bowl.
  • Spread the garlic mayo on the inside of the bread slices.
  • Spread mashed avocado over one side of each sandwich.
  • Layer chicken, cheese, and tomato slices if using.
  • Close the sandwiches and spread butter or mayonnaise on the outside of the bread.
  • Heat a skillet over medium-low heat.
  • Cook each sandwich for 3–4 minutes per side, pressing gently, until the bread is golden and the cheese is melted.
  • Let the sandwiches rest for 1 minute, then slice and serve warm.

Notes

Warm cold chicken slightly before building the sandwich so the cheese melts evenly. Cook over medium-low heat to avoid browning the bread before the inside is hot.
