Equipment

  • large skillet with lid
  • Blender or food processor (for cottage cheese)
  • Medium saucepan (for rice)
  • Small saucepan (for beans)
  • Two forks (for shredding chicken)
  • 4 wide serving bowls

Ingredients

Enchilada Chicken

  • 1.5 lbs boneless skinless chicken thighs or breast — thighs recommended for meal prep
  • 1.25 cups red enchilada sauce store-bought or homemade
  • 1 tsp ground cumin
  • 0.5 tsp chili powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp salt

Cottage Cheese Crema

  • 1 cup full-fat cottage cheese blended 30 to 45 seconds until completely smooth
  • pinch of salt, garlic powder, and lime zest stirred into blended cottage cheese

Bowl Base

  • 1.5 cups jasmine rice, uncooked cooked in chicken broth, finished with lime juice and cilantro
  • 1 can black beans (15 oz), drained and rinsed warmed with a pinch of cumin and garlic powder
  • 1 cup shredded cheddar or Mexican blend cheese added over warm chicken to melt slightly

Fresh Toppings

  • 2 ripe avocados, sliced
  • fresh cilantro, roughly chopped
  • pickled jalapeños to taste
  • 1 cup cherry tomatoes, halved
  • 2 limes, cut into wedges squeezed over finished bowls
  • hot sauce to taste

Instructions

  • Season chicken thighs with cumin, chili powder, smoked paprika, garlic powder, and salt. Warm 1 cup enchilada sauce in a large skillet over medium heat. Add seasoned chicken. Cover and simmer 15 to 18 minutes until cooked through. Shred with two forks directly in the sauce. Stir in remaining ¼ cup enchilada sauce.
  • Cook jasmine rice in chicken broth according to package directions. Stir in lime juice and chopped cilantro while still hot.
  • Warm drained black beans in a small saucepan with a pinch of cumin and garlic powder.
  • Blend cottage cheese in a blender or food processor for 30 to 45 seconds until completely smooth. Stir in a pinch of salt, garlic powder, and lime zest.
  • Assemble bowls: divide cilantro-lime rice among 4 bowls. Add enchilada chicken and sauce. Add black beans alongside. Sprinkle shredded cheese over the warm chicken to melt slightly.
  • Add toppings: spoon blended cottage cheese crema over each bowl. Add sliced avocado, fresh cilantro, pickled jalapeños, and cherry tomatoes.
  • Squeeze fresh lime over each bowl. Add hot sauce to taste. Serve immediately.

Notes

Blend cottage cheese until genuinely completely smooth — any visible curd will remind people it's cottage cheese. Season chicken aggressively before cooking. Simmer chicken directly in enchilada sauce for maximum flavor. Add cottage cheese crema cold immediately before serving — the temperature contrast is important. Season black beans separately — plain unseasoned beans taste flat against the bold chicken. For meal prep: store components separately, keep cottage cheese in its own container, add fresh toppings at serving time. Chicken and sauce taste better on day two and three.
