Ingredients

Ingredients

  • 1 large English cucumber thinly sliced or diced
  • 8 oz cream cheese softened
  • 0.25 cup Greek yogurt or sour cream
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 2 tbsp fresh dill chopped
  • 0.5 tsp garlic powder

Instructions

  • Slice or dice the cucumber and place it in a mixing bowl.
  • Sprinkle the cucumber lightly with salt and let it sit for 10–15 minutes.
  • Pat the cucumber dry with paper towels to remove extra moisture.
  • In a separate bowl, mix softened cream cheese, Greek yogurt or sour cream, mayonnaise, lemon juice, dill, garlic powder, onion powder, and black pepper.
  • Stir until the dressing is smooth and creamy.
  • Fold the cucumbers into the creamy dressing.
  • Taste and adjust with more dill, pepper, lemon juice, or salt if needed.
  • Spread the cucumber salad filling evenly over 6 slices of bread.
  • Add chives, lettuce, or sprouts if desired, then top with the remaining bread slices.
  • Trim the crusts if making tea sandwiches, cut into halves or triangles, and serve right away.

Notes

Salt and dry the cucumbers before mixing so the sandwiches do not get soggy. Assemble close to serving time for the best texture.
