Equipment

  • 10-inch cast iron skillet
  • Medium saucepan
  • large mixing bowl
  • whisk
  • spatula

Ingredients

Brownie Batter

  • 0.5 cup unsalted butter plus extra for greasing skillet
  • 3 oz dark chocolate, chopped 60% cocoa or higher
  • 0.75 cup granulated sugar
  • 1 tbsp brown sugar
  • 2 large eggs room temperature
  • 1 egg yolk room temperature
  • 1 tsp vanilla extract
  • 0.25 cup all-purpose flour
  • 2 tbsp Dutch-process cocoa powder
  • 0.25 tsp salt

To Serve

  • 2 scoops vanilla ice cream
  • flaky sea salt for finishing
  • caramel sauce optional, for drizzling

Instructions

  • Preheat the oven to 350°F. Place a 10-inch cast iron skillet in the oven while it preheats.
  • Melt the butter with the chopped dark chocolate in a medium saucepan over low heat, stirring until completely smooth. Remove from heat and cool for 5 minutes.
  • In a large bowl, whisk together the granulated sugar and brown sugar.
  • Add the cooled chocolate mixture and whisk to combine.
  • Add the eggs, egg yolk, and vanilla extract. Whisk vigorously for 2 minutes until the batter looks glossy and slightly thickened.
  • Fold in the flour, cocoa powder, and salt until just combined. Do not overmix.
  • Carefully remove the hot skillet from the oven. Grease it generously with butter.
  • Pour the batter into the hot skillet and spread evenly.
  • Bake for 18 to 22 minutes until the edges are set and the center has a very slight jiggle.
  • Remove from the oven and let sit for 3 to 5 minutes. Add a generous scoop of vanilla ice cream to the center, sprinkle with flaky sea salt, drizzle with caramel if desired, and serve immediately from the skillet.

Notes

Preheat the skillet for crispy caramelized edges. Don't overbake — center should jiggle slightly when done. Cool 3 to 5 minutes before adding ice cream. Whisk eggs and sugar vigorously for a shiny crackly top. Add espresso powder to deepen chocolate flavor.
