Equipment

  • Grill or grill pan
  • Large bowl
  • Tongs
  • Serving platter

Ingredients

Ingredients

  • 1 lb fresh garlic scapes ends trimmed
  • 2 tbsp olive oil
  • flaky sea salt to taste
  • fresh cracked black pepper to taste
  • 1 lemon, halved for finishing
  • parmesan cheese, shaved optional, for serving

Instructions

  • Preheat the grill or grill pan to high heat.
  • Trim any dry or tough ends from the garlic scapes. Leave them whole.
  • In a large bowl, toss the scapes with olive oil, a generous pinch of flaky salt, and fresh cracked black pepper.
  • Place the scapes directly on the hot grill in a single layer.
  • Grill for 2 to 3 minutes per side until tender with visible char marks and slightly caramelized edges.
  • Transfer to a serving platter immediately.
  • Squeeze fresh lemon juice over the hot scapes.
  • Top with shaved parmesan and an extra pinch of flaky salt if desired. Serve immediately.

Notes

Use high heat for the best char. Don't overcrowd the grill. Watch closely — they char quickly. Squeeze lemon immediately after grilling while still hot. Leftovers are excellent chopped into pasta or grain bowls.
