Equipment

  • Cast iron skillet or heavy skillet
  • Lid that fits the skillet
  • spatula
  • Sharp knife and cutting board

Ingredients

Jalapeño Popper Grilled Cheese

  • 2 slices thick-sliced sourdough bread ¾ to 1-inch thick
  • 2 tbsp full-fat block cream cheese, softened spread on inner surface of both slices
  • 0.5 cup sharp cheddar cheese, freshly shredded from a block for best melt
  • 2 fresh jalapeños, thinly sliced seeds and membrane removed for milder heat
  • 3 strips bacon, cooked until shatteringly crispy drained completely — fully cool before adding
  • 1.5 tbsp unsalted butter, softened mixed with a pinch of garlic powder and smoked paprika
  • pinch of garlic powder mixed into butter
  • pinch of smoked paprika mixed into butter

Instructions

  • Cook bacon until shatteringly crispy. Drain completely on paper towels and let cool fully. Crumble or leave whole.
  • Slice jalapeños into thin rounds. Remove seeds and membrane for milder heat.
  • Mix a pinch of garlic powder and smoked paprika into the softened butter. Spread generously on the outer surfaces of both bread slices all the way to the edges.
  • Spread a generous layer of softened cream cheese on the inner surface of both bread slices.
  • On one slice, layer half the shredded cheddar, then jalapeño rounds, then crispy bacon, then remaining cheddar. Close the sandwich and press gently.
  • Heat a cast iron skillet over medium heat for 1 minute. Place sandwich in skillet. Cover with a lid. Cook 4 to 5 minutes until the bottom is deeply golden.
  • Flip carefully. Cover again and cook 3 to 4 more minutes until both sides are deeply golden and cheese is completely melted.
  • Remove from skillet. Rest 2 minutes. Slice on the diagonal. Serve immediately.

Notes

Cook on medium heat — not medium-high. The cream cheese needs more time to melt than standard cheese and higher heat burns the bread before the inside is ready. Cover with a lid for the first 4 to 5 minutes to help melt the interior faster. Soften cream cheese to true room temperature before spreading — cold cream cheese tears the bread. Cook bacon until shatteringly crispy and cool completely before adding — warm bacon steams the interior. Rest 2 minutes before slicing — the cream cheese firms slightly and won't pour out. Slice on the diagonal for the most impressive cross-section reveal.
