Equipment

  • 4-compartment bento box with tight-fitting lid
  • Sharp knife and cutting board
  • Small ice pack for transport

Ingredients

Bento Box

  • 1 medium Honeycrisp or Fuji apple cored and sliced into 8 thin wedges
  • 0.5 lemon, juiced to prevent apple browning
  • 2 tbsp creamy peanut butter for dipping
  • 1 oz sharp cheddar cheese cut into ¾-inch cubes
  • 15 whole grain crackers Triscuits, Wheat Thins, or Annie's Cheddar Bunnies

Optional Add-Ins

  • grapes, blueberries, or baby carrots for any extra compartment

Instructions

  • Core and slice the apple into 8 thin wedges. Squeeze lemon juice over the slices and toss gently to coat all surfaces.
  • Cut the cheddar cheese into ¾-inch cubes.
  • Spoon peanut butter into the dipping compartment of the bento box.
  • Arrange apple slices in one compartment, cheese cubes in another, and crackers in the third. Add any optional extras to remaining compartments.
  • Seal the bento box tightly. Refrigerate until ready to serve or pack with an ice pack.

Notes

Always squeeze lemon juice over apple slices immediately after cutting to prevent browning for up to 24 hours. Use conventional creamy peanut butter (not natural) for a consistent dipping compartment that doesn't separate. Pack crackers in a separate zip-lock inside the box if making more than a few hours ahead to keep them crisp. Use a bento box with tight-fitting compartment lids to prevent peanut butter from migrating. Include an ice pack in the lunchbag to keep cheese from sweating. For nut-free schools, substitute sunflower seed butter.
