Equipment

  • 4 airtight bento boxes with compartments
  • Baking sheet (for roasting chickpeas)
  • Sharp knife and cutting board

Ingredients

Hummus Compartment

  • 1 cup creamy hummus store-bought or homemade — divided among 4 boxes
  • 2 tbsp extra virgin olive oil for drizzling over hummus surface in each box
  • smoked paprika pinch over each hummus portion

Roasted Spiced Chickpeas

  • 1 can chickpeas (15 oz), drained, rinsed, and completely dried
  • 1 tbsp olive oil for roasting
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • pinch of cayenne optional

Vegetable and Cheese Components

  • 4 Persian cucumbers, sliced into rounds
  • 1 cup cherry tomatoes whole or halved
  • 0.5 cup kalamata olives, pitted
  • 3 oz block feta cheese, crumbled from a block for best flavor
  • 2 small whole wheat pitas cut into wedges — packed separately

Instructions

  • Roast the chickpeas: Preheat oven to 425°F. Completely dry the drained chickpeas with paper towels. Toss with olive oil and all spices. Spread in a single layer on a baking sheet. Roast 20 to 25 minutes until golden and crunchy, shaking halfway. Cool completely.
  • Prep vegetables: Slice cucumbers, halve or leave whole cherry tomatoes, pit olives, and crumble feta from a block.
  • Assemble 4 bento boxes: Spoon hummus into the main compartment. Drizzle with olive oil and a pinch of smoked paprika. Fill remaining compartments with cucumber rounds, cherry tomatoes, kalamata olives, crumbled feta, and cooled roasted chickpeas. Tuck pita wedges in separately.
  • Seal tightly and refrigerate for up to 3 days. Pack pita separately each day to prevent sogginess.

Notes

Pat chickpeas completely dry before roasting — moisture is the enemy of crunchiness. Roast until genuinely golden and crunchy, not just warmed through. Pack pita separately from hummus to prevent sogginess. Keep feta in its own compartment to prevent brine from flavoring the hummus. Drizzle olive oil over hummus surface before sealing to prevent drying. Eat boxes with crunchiest chickpeas first. Roasted chickpeas soften slightly by day 3 but remain flavorful.
