Equipment

  • Standard 12-cup muffin tin
  • Cupcake liners
  • hand mixer or stand mixer
  • Large mixing bowls
  • Piping bag or zip-lock bag
  • Small offset spatula

Ingredients

Graham Cracker Crust

  • 1.5 cups graham cracker crumbs about 10 full sheets
  • 5 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar

No-Bake Cheesecake Filling

  • 16 oz full-fat block cream cheese fully softened to room temperature
  • 0.75 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp fresh lemon juice
  • 0.75 cup cold heavy whipping cream whipped to stiff peaks

Toppings

  • fresh strawberries, sliced or blueberries, raspberries
  • caramel sauce, lemon curd, or chocolate ganache optional, choose your topping

Instructions

  • Line a standard 12-cup muffin tin with paper or foil cupcake liners.
  • Combine the graham cracker crumbs, melted butter, and granulated sugar until it resembles wet sand. Divide evenly among the 12 lined cups (about 2 tablespoons each) and press firmly using the back of a small spoon or shot glass.
  • Freeze for 10 minutes while you prepare the filling.
  • Beat the softened cream cheese until completely smooth, about 3 minutes.
  • Add the powdered sugar, vanilla extract, and lemon juice. Beat until smooth and fully combined.
  • In a separate cold bowl, whip the cold heavy cream to stiff peaks.
  • Fold the whipped cream gently into the cream cheese mixture until just combined with no streaks remaining.
  • Pipe or spoon the filling evenly into the chilled crusts, filling just above the liner edge. Smooth the tops with a small offset spatula.
  • Refrigerate for at least 4 hours or overnight until fully set.
  • Top with fresh berries, caramel, lemon curd, or chocolate sauce just before serving.

Notes

Use full-fat block cream cheese only — not spreadable. Bring cream cheese to full room temperature before beating to avoid lumps. Whip heavy cream to stiff peaks before folding. Freeze crusts 10 minutes before filling. Chill filled cups at least 4 hours — overnight is better. Add toppings 1-2 hours before serving maximum. Use liners for easiest removal.
