About the Ingredients

Cottage Cheese

Full-fat cottage cheese is what you want for these Strawberry Lemon Cottage Cheese Muffins. It blends smoothly into the batter and adds moisture, protein, and a subtle tang that works perfectly with the lemon. Don’t drain it — the liquid is part of what keeps these cottage cheese muffins with strawberries so tender. Low-fat works as a substitute but the muffins won’t be quite as rich.

Fresh Strawberries

Fresh strawberries give the best texture and the brightest flavor. Dice them small — about ½ inch pieces — so they distribute evenly through the batter. Pat them dry before folding in to prevent excess moisture. Frozen strawberries work but fold them in straight from frozen — don’t thaw first.

Lemon Zest and Juice

Both zest and juice go into this recipe. The zest is where most of the lemon flavor lives — don’t skip it. One large lemon gives you enough for the whole batch. Fresh lemon is much better than bottled here and is what gives these Strawberry Lemon Cottage Cheese Muffins that bright, bakery-style flavor.

Eggs

Two eggs give the batter structure and help the muffins rise properly. Room temperature eggs blend more evenly than cold ones. If you forget to take them out ahead of time, set them in a bowl of warm water for 5 minutes.

All-Purpose Flour

Standard all-purpose flour works perfectly. You can swap half for whole wheat for a heartier muffin. Don’t overmix once the flour goes in — stir just until combined and stop. Overmixing makes muffins tough.

Baking Powder and Baking Soda

Both go into this recipe and give the muffins a good rise and domed top. Make sure your baking powder isn’t old — if it’s been open more than 6 months it may not give you enough lift.

Tips and Tricks

Dice the strawberries small and pat them dry before folding into the batter. Big wet pieces sink to the bottom and release too much moisture. Don’t overmix once the flour is added. Stir just until no dry streaks remain. Fill the muffin cups about ¾ full for a good dome. Let the muffins cool in the pan for 5 minutes before moving to a rack. For taller bakery-style domes on your Strawberry Lemon Cottage Cheese Muffins, start the oven at 425°F for the first 5 minutes then drop to 375°F for the rest of the bake.

Pro Tips

Toss the diced strawberries in 1 teaspoon of flour before folding them in. This keeps them suspended throughout the muffin instead of sinking. Add a teaspoon of lemon extract along with the zest for a stronger lemon punch in your cottage cheese muffins with strawberries. Sprinkle coarse sugar over each muffin before baking for a slight crunch and a bakery look. Blend the cottage cheese for 30 seconds before adding if you want a completely smooth crumb with no visible curds.

Step-by-Step Instructions

  1. Preheat your oven to 375°F. Line a 12-cup muffin tin with paper liners or grease each cup well.
  2. In a large bowl, whisk together 2 eggs, ¾ cup full-fat cottage cheese, ⅓ cup neutral oil, ½ cup sugar, the zest of 1 large lemon, and 2 tablespoons fresh lemon juice.
  3. In a separate bowl, whisk together 1¾ cups all-purpose flour, 1½ teaspoons baking powder, ¼ teaspoon baking soda, and ½ teaspoon salt.
  4. Pour the dry ingredients into the wet and stir gently until just combined. Do not overmix.
  5. Toss 1 cup of diced, patted-dry strawberries with 1 teaspoon of flour. Fold gently into the batter.
  6. Divide batter evenly among the 12 cups, filling each about ¾ full.
  7. Sprinkle coarse sugar over each muffin if using.
  8. Bake for 20 to 23 minutes until tops are golden and a toothpick comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack.

Variations

Blueberry lemon version: Swap the strawberries for fresh blueberries. The lemon and blueberry combination works just as well in these cottage cheese muffins with strawberries format. Strawberry lemon poppy seed: Add 1 tablespoon of poppy seeds to the dry ingredients for extra texture and that classic flavor. Chocolate chip strawberry: Skip the lemon, add ½ teaspoon vanilla, and fold in ½ cup mini chocolate chips along with the strawberries. Gluten-free version: Use a 1:1 gluten-free flour blend. The cottage cheese keeps things moist enough that the texture holds up well. Extra protein version: Add one scoop of vanilla protein powder to the dry ingredients and 2 tablespoons of extra milk to keep the batter from getting too thick.

How to Store

Store Strawberry Lemon Cottage Cheese Muffins in an airtight container in the refrigerator for up to 5 days. The cottage cheese means they do better in the fridge than at room temperature. To freeze, wrap each muffin individually in plastic wrap and place in a freezer bag for up to 3 months. Thaw overnight in the fridge or microwave for 30 to 45 seconds from frozen. Warm them for 15 to 20 seconds in the microwave before eating. These Strawberry Lemon Cottage Cheese Muffins taste just as good reheated as they do fresh.

Frequently Asked Questions

Can I taste the cottage cheese in Strawberry Lemon Cottage Cheese Muffins? No. Once baked, the cottage cheese is completely undetectable. It just makes the muffins moist and adds protein without any flavor of its own.

Can I use frozen strawberries? Yes. Don’t thaw them first — fold straight from frozen and get the muffins into the oven quickly. Thawed strawberries release too much liquid.

How much protein is in each muffin? Each muffin has approximately 5 to 6 grams of protein. Serve with Greek yogurt to make it a more complete breakfast.

Why did my strawberries sink? The pieces were probably too large or too wet. Dice small, pat dry, and toss in flour before folding in.

Can I make this strawberry lemon muffins recipe into a loaf? Yes. Pour into a greased 9×5 loaf pan and bake at 350°F for 50 to 60 minutes. Tent with foil at 30 minutes if the top browns too fast.

Can I reduce the sugar? Yes. Cut down to ⅓ cup without affecting texture much. The strawberry and lemon flavors still come through clearly.

Do I need to blend the cottage cheese first? No, but blending gives a slightly smoother crumb. It works fine either way in this cottage cheese muffins with strawberries recipe.

Can I use Greek yogurt instead of cottage cheese? Yes. Use the same amount of full-fat plain Greek yogurt. The muffins will be slightly tangier but still very good.

These are the kind of muffins I make on Sunday and eat all week. What makes this strawberry lemon muffins recipe different from a standard muffin is the texture. Cottage cheese keeps the crumb tender and moist even after a few days in the fridge. You don’t need sour cream or buttermilk — the cottage cheese does all that work on its own. If you’ve never baked with cottage cheese before, this is a great first recipe to try it.

All-Purpose Flour

Standard all-purpose flour works perfectly here. If you want to make them a little heartier, you can swap half the flour for whole wheat flour. The texture will be slightly denser but still very good. Don’t overmix once the flour goes in — stir just until combined and stop. Overmixing develops gluten and makes muffins tough.

Baking Powder and Baking Soda

Both go into this recipe. The combination gives the muffins a good rise and that slightly domed top. Make sure your baking powder isn’t old — if it’s been open more than 6 months, it may not give you enough lift.

Tips and Tricks

Dice the strawberries small and pat them dry before folding into the batter. Big wet pieces sink to the bottom and release too much moisture during baking. Don’t overmix the batter once the flour is added. Stir just until no dry streaks remain and then stop. A few lumps are fine. Fill the muffin cups about ¾ full for a good dome. Any more and they’ll overflow; any less and you’ll get flat tops. Let the muffins cool in the pan for 5 minutes before moving them to a wire rack. They firm up as they cool and are easier to handle. If you want taller bakery-style domes, start the oven at 425°F for the first 5 minutes then drop it to 375°F for the rest of the bake time. The initial high heat gives the muffins a burst of rise.

Pro Tips

Toss the diced strawberries in 1 teaspoon of flour before folding them into the batter. This helps them stay suspended throughout the muffin instead of sinking. Add a teaspoon of lemon extract along with the zest if you want a stronger lemon flavor. The zest alone is good but the extract takes the lemon punch up a notch. For a bakery-style sugar top, sprinkle a little coarse sugar over each muffin right before baking. It adds a slight crunch and makes them look really good. Blend the cottage cheese in a blender or food processor for 30 seconds before adding it to the batter if you want a completely smooth crumb. It still works without blending, but blending gives a slightly finer texture.

Step-by-Step Instructions

  1. Preheat your oven to 375°F. Line a 12-cup muffin tin with paper liners or grease each cup well with butter or cooking spray.
  2. In a large bowl, whisk together 2 eggs, ¾ cup of full-fat cottage cheese, ⅓ cup of neutral oil (or melted butter), ½ cup of sugar, the zest of 1 large lemon, and 2 tablespoons of fresh lemon juice until well combined.
  3. In a separate bowl, whisk together 1¾ cups of all-purpose flour, 1½ teaspoons of baking powder, ¼ teaspoon of baking soda, and ½ teaspoon of salt.
  4. Pour the dry ingredients into the wet ingredients and stir gently until just combined. Do not overmix.
  5. Toss 1 cup of diced, patted-dry fresh strawberries with 1 teaspoon of flour. Fold them gently into the batter.
  6. Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.
  7. Sprinkle a pinch of coarse sugar over the top of each muffin if using.
  8. Bake for 20 to 23 minutes until the tops are golden and a toothpick inserted in the center comes out clean.
  9. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Variations

Blueberry lemon version: Swap the strawberries for fresh blueberries. Same amount, same flour toss. The lemon and blueberry combination is a classic for a reason. Strawberry lemon poppy seed: Add 1 tablespoon of poppy seeds to the dry ingredients for a little extra texture and that classic lemon poppy seed flavor. Chocolate chip strawberry: Skip the lemon zest and juice, add ½ teaspoon of vanilla extract, and fold in ½ cup of mini chocolate chips along with the strawberries. Completely different direction but really good. Gluten-free version: Use a 1:1 gluten-free flour blend in place of the all-purpose flour. The cottage cheese keeps the muffins moist enough that the texture holds up well. Extra protein version: Add one scoop of unflavored or vanilla protein powder to the dry ingredients. Add 2 tablespoons of extra milk to keep the batter from getting too thick.

How to Store

Store Strawberry Lemon Cottage Cheese Muffins in an airtight container in the refrigerator for up to 5 days. The cottage cheese means they do better in the fridge than at room temperature — room temp is fine for 1 to 2 days but the fridge keeps them fresher longer. To freeze, let them cool completely, wrap each muffin individually in plastic wrap, and place in a freezer bag for up to 3 months. Thaw overnight in the fridge or microwave for 30 to 45 seconds straight from frozen. Warm them in the microwave for 15 to 20 seconds before eating if you like them slightly warm. They taste just as good as the day you baked them.

Frequently Asked Questions

Can I taste the cottage cheese in these muffins? No. Once baked, the cottage cheese is completely undetectable. It just makes the muffins moist and adds protein without any flavor of its own. Even people who don’t like cottage cheese eat these without knowing it’s in there.

Can I use frozen strawberries in Strawberry Lemon Cottage Cheese Muffins? Yes. Don’t thaw them first — fold them in straight from frozen and get the muffins into the oven quickly. Thawed frozen strawberries release too much liquid and make the batter wet.

How much protein is in each muffin? Each muffin has approximately 5 to 6 grams of protein, which is higher than a standard muffin. Serve with Greek yogurt or a boiled egg to make it a more complete breakfast.

Why did my strawberries sink to the bottom? The pieces were probably too large or too wet. Dice them small, pat dry, and toss in a teaspoon of flour before folding in. That combination keeps them suspended in the batter.

Can I make this strawberry lemon muffins recipe into a loaf? Yes. Pour the batter into a greased 9×5 loaf pan and bake at 350°F for 50 to 60 minutes until a toothpick comes out clean. Tent with foil at the 30-minute mark if the top is browning too fast.

Can I reduce the sugar? Yes. You can cut the sugar down to ⅓ cup without affecting the texture much. The muffins will be less sweet but the strawberry and lemon flavors still come through clearly.

Do I need to blend the cottage cheese first? No. It blends into the batter naturally as you mix. If you want a completely smooth crumb with no visible curds, a 30-second blend before adding it helps, but it’s not necessary.

Can I use Greek yogurt instead of cottage cheese? Yes. Use the same amount of full-fat plain Greek yogurt. The muffins will be slightly tangier and a little less moist but still very good.
